Long
Clawson Dairy, a Cheese Dairy located in the heart of the Vale of Belvoir, is
proud to finally announce that it's not only the 'Big Cheese' in the world of
Stilton, but it also has the 'Big Cheese' to boast off in the
hall of fame. The dairy staff had
created a wedge of blue stilton which weighed 110.5 Kg fit enough to make the centenary celebration
of the firm
worth remembering for a lifetime.

Taylor the chief executive of the firm said that it was
a tough challenge but was impressed with the quality of cheese created for the occasion. The World's Largest
Slice of Cheese was cut from a 145kg block, which was made using 824 liters of
full fat pasteurized cow's milk, 1.8kg of salt, 190ml of vegetarian rennel
(coagulant) and 0.0003g of dairy cultures. In
order to create the slice the dairy had to create the world's largest stilton,
at just over 140kg (309lbs). The
cheese was matured for about 12 weeks, four weeks longer than a normal-sized Stilton. Cheese makers had to make
special cheese cutters to slice the Stilton and use a pallet scale to weigh it. The makers felt that that the process was like the way a fine
wine in a big bottle matures fast.
Specialist Cheese Maker Andy Christian said that they had just altered the ratios of
the product. He lauded the team’s effort without whose contribution the monster
cheese would have never been a reality. The Borough of Melton's mayor and a local police inspector were the
official witnesses of the world record attempt. Long Clawson
Primary School pupils were also invited along to witness the world record
attempt and were amazed by the super-sized slab of Stilton. The giant
cheese was shared out among the company's employees and
their families.

Largest slice of Cheese weighed 110.5 Kg and was set by the staff of Long Clawson Diary at
Leicestershire, England on September 22, 2011.
